For the Sabudana Vada

Instructions

  1. Soak the Sabudana:

Start by rinsing the sabudana under cold water until the water runs clear. Then, soak the sabudana in enough water to cover it completely. Allow it to soak for at least 4-5 hours or overnight for best results. The sabudana should become soft and easy to mash.

  2. Prepare the Mixture:

Once the sabudana is well-soaked, drain any excess water using a colander. In a mixing bowl, combine the soaked sabudana, mashed potatoes, ground peanuts, chopped coriander leaves, green chilies, cumin seeds, lemon juice, and salt. Mix everything together thoroughly until well-combined.

  3. Shape the Vadas:

Take a small portion of the mixture and shape it into a round patty using your palms. Repeat this process until you have used all the mixture. The vadas should be approximately 2-3 inches in diameter and 1/2 inch thick. Keep the shaped vadas aside on a plate.

  4. Heat the Oil:

In a deep pan or kadai, heat oil on medium heat for deep frying. Make sure there is enough oil to submerge the vadas completely.

  5. Fry the Vadas:

Once the oil is hot, carefully slide the vadas into the pan. Fry them in small batches, ensuring they have enough space to cook evenly. Fry the vadas on medium heat until they turn golden brown and crispy on both sides. This process should take approximately 3-4 minutes per batch.

  6. Drain and Serve:

Once the vadas are cooked to perfection, use a slotted spoon to remove them from the oil. Place them on a paper towel-lined plate to absorb any excess oil. Repeat the frying process for the remaining vadas.Sabudana vadas are best enjoyed when served hot. Serve them with your favorite chutney, such as mint chutney or sweet and tangy tamarind chutney. These crispy delights can be savored as a breakfast item, tea-time snack, or as a part of a festive meal.
