Prepare the Batter:
In a large mixing bowl, combine the gram flour (besan), semolina (rava), ginger-green chili paste, lemon juice, sugar, turmeric powder, salt, and oil. Mix well.
Gradually add water to the mixture to make a smooth batter. The batter should be thick yet flowing consistency. Make sure there are no lumps in the batter.
Grease a round steel or aluminum plate with oil. You can also use a baking dish for steaming the khaman.
Now, add eno fruit salt to the batter and quickly mix it in one direction. The batter will become frothy and increase in volume.
Immediately pour the batter into the greased plate or baking dish.
Prepare a steamer:
Prepare a steamer by heating water in a large pot or steamer pan. Place a stand or a small bowl at the bottom to elevate the plate above the water level.
Carefully place the plate with the batter in the steamer and cover it with a lid.
Steam the khaman on medium heat for about 15-20 minutes or until a toothpick inserted into the khaman comes out clean.
Once steamed, remove the plate from the steamer and allow it to cool for a few minutes.
Cut the steamed khaman into square or diamond-shaped pieces.
For the tempering:
For the tempering, heat the oil in a small pan. Add mustard seeds and let them crackle. Then, add sesame seeds, asafoetida chopped green chilies and curry leaves. Sauté for a few seconds.
Pour this tempering over the steamed khaman and spread it evenly.
Garnish with grated coconut and fresh coriander leaves.
