  1. Making the Puris:
    • In a mixing bowl, combine the semolina, all-purpose flour, and salt. 
    • Gradually add water and knead the dough until it becomes smooth and pliable. 
    • Cover the dough with a damp cloth and let it rest for 15-20 minutes. 
    • After resting, divide the dough into small lemon-sized balls.
    • Roll out each ball into a thin circle (approximately 2-3 inches in diameter).
    • Heat oil in a deep pan or kadai for frying.
    • Once the oil is hot, carefully slide in the rolled puris one by one.
    • Fry until they turn golden brown and crisp. Remove them from the oil and place them on a kitchen towel to absorb excess oil. Repeat this process with the remaining puris.
  2. Preparing the Filling:
    •  In a bowl, mix the mashed potatoes, boiled chickpeas, chopped onions, chopped coriander leaves, chaat masala, roasted cumin powder, and salt.
    • Gently toss the mixture until well combined.
  3. Making the Spicy Water (Pani):
    •  In a blender, add tamarind pulp, mint leaves, coriander leaves, green chilies, roasted cumin powder, chaat masala, black salt, and regular salt. 
    • Blend the ingredients until you get a smooth paste. 
    • Transfer the paste to a large mixing bowl and add water. Mix well until all the flavors are incorporated.
  4. Assembling the Panipuri:
    • Take a puri and make a small hole on one side using your thumb or a spoon.
    • Fill the puri with a spoonful of the potato and chickpea filling. 
    • Dip the filled puri into the spicy water (pani) to make it flavorful.
    • Place the panipuri on a serving plate and garnish with additional chopped onions and coriander leaves, if desired.
    • Repeat the process with the remaining puris and filling.
  5. Serving:
    • Serve the panipuri immediately to enjoy its crunchy texture and burst of flavors. 
    • You can also serve it with additional tamarind chutney or mint chutney for extra tanginess.
