Step 1:

  1. Prepare the batter:
    • In a mixing bowl, combine besan, yogurt, water, ginger paste, green chili paste, and salt.

    • Pour the batter into the pan and stir continuously to avoid any lumps.
    • Keep stirring the mixture until it thickens and starts leaving the sides of the pan. This process should take about 8-10 minutes.
    • Once the batter is cooked, quickly pour it onto a greased flat surface or the back of a thali (large stainless steel plate).
    • Spread the batter into a thin, even layer using a spatula, allowing it to cool and set for a few minutes.

Step 3:

  1. Spread and Roll:
    • Take a small portion of the cooked batter and spread it thinly and evenly on the back of a greased plate or a smooth     surface.
    • Allow it to cool for a minute, then carefully roll it up into a tight cylinder.
    • Repeat this process with the remaining batter.

Step 4:

  1. Prepare the tempering:
    • Heat oil in a small pan over medium heat.
    • Add mustard seeds and Sesame seeds let them splutter. Then add cumin seeds, asafoetida, and curry leaves. Stir for a few seconds.
    • Add finely chopped green chilies and sauté for another minute.
    • Turn off the heat and keep the tempering aside.
  2. Garnish and Serve:
    • Once the rolled Khandavi cylinders have cooled, slice them into bite-sized pieces.
    • Arrange the Khandavi pieces on a serving dish.
